Hospitality Management Students Put on a Spectacular Gourmet Dinner
Hospitality management students transformed the Great Hall into a five-star dining experience during this year’s Gourmet Dinner, a two-night event themed “Be Our Guest.”
Inspired by Beauty and the Beast, the evening featured a menu that blended elegance and creativity — from short rib Wellington and champagne sorbet to a rose mousse cake finale.
Students in the Advanced Food and Beverage class planned and executed every aspect of the event. They developed the theme, created and tested the menu, managed marketing and finances, prepared the food, and provided exceptional service throughout both nights.
Guests were treated to passed appetizers — including truffle cream gougères — followed by French onion soup, a palate-cleansing sorbet, a choice of three entrées, an arugula salad, and dessert. Between courses, performers from the UNH Theatre and Dance Department brought the theme to life with three musical numbers from Beauty and the Beast.
Many students took on key leadership roles, including General Manager Alexandra Mahoney and Executive Chef Adam Young, applying what they’ve learned in their hospitality management courses to create an immersive and memorable experience for the UNH community.
Special thanks go to faculty members Krista Marvel and Chef Ron Boucher for guiding students through the process, and to all who attended and supported the event — including UNH President Elizabeth Chilton and Paul College Dean Lucy Gilson.
