During the academic year, Advanced Food and Beverage students majoring in Hospitality Management delight the UNH community and beyond with a gourmet dining experience.
Students are responsible, with instructional guidance from faculty, for all aspects of the event: planning and preparing the menu, selling and marketing the event, managing finances, and creating an enjoyable night for all who attend. The "Gourmet Dinner" series is an opportunity for them to apply fundamentals learned through Hospitality Management courses, and get real-world, hands-on experience.

Gougère with Truffle Cream
Warm, airy French cheese puffs filled with a rich black truffle cream
Smoked Salmon Mousse Cucumber (GF)
Silky smoked salmon mousse piped atop crisp cucumber rounds, finished with dill and caviar
Baked Brie with Fig Jam
Creamy brie baked in a golden pastry, complemented by a sweet fig jam, toasted pecans and a hint of fried rosemary
Caramelized Onion and Cranberry Tartlet (V)
A flaky tartlet filled with caramelized onions and sugared cranberries
Soups:
French Onion Soup with Comté
Caramelized onion soup topped with a toasted baguette and Comté gratinee
Potage Parmentier (GF, V)
Classic French potato and leek soup
Palate Cleanser:
Rosé Champagne and Citrus Sorbet (GF, V)

Short Rib Wellington
Red wine braised short rib with mushroom duxelles, prosciutto, and a puff pastry crust served with Parisian potatoes and green bean bundles
Statler Chicken (GF)
Oven roasted chicken breast with natural jus, celery root and potato purée, and roasted carrots
Vegetable Napoléon (V, GF)
Layers of roasted seasonal vegetables, wild rice pilaf, topped with a colored pepper coulis
Salad:
Arugula and Goat Cheese Salad (GF)
Arugula tossed in a fennel carraway vinaigrette topped with toasted pistachios, dried cranberries, and roasted beets
Dessert:
Rose Mousse Cake (GF)
A rose-shaped Godiva mousse layered with chocolate sponge and raspberry compote

Gourmet Dinner takes place at UNH Paul College on 10 Garrison Avenue in Durham, NH. The dinner is set in our building's Great Hall. Please enter through the main entrance off Garrison Avenue. It is at the front of the building and takes you to the first floor.

The Fundamentals:
- Purchases are not refundable.
- The dinners will be held rain, shine or snow.
- Alternative meals, due to food allergies or restrictive diets, are available upon request. While we are certainly able to accommodate dietary restrictions, we are unable to make substitutions for preferences. If you have allergies, please disclose that on the ticketing website when you purchase your ticket.
What to Wear:
Please wear attire that is suitable for a gourmet dining experience. This year we encourage cocktail attire that reflects the elegance of the evening, rather than formal gowns or costumes. Our color palette draws inspiration from the Beauty and the Beast ballroom featuring gold, red, and white, accented by deep blue and roses. We hope as though you feel like you have stepped into an enchanted setting the moment you arrive.
Cancelations & Ticket Transfers
Refunds are NOT available. However, if there is availability you can switch your ticket for a different night if there are conflicts with your original purchase.
Dining Events
The event will begin with a cocktail hour at 5:30 PM. Before being seated, enjoy a glass of champagne and small bites while previewing our silent auction!
