As more of us strive to “eat local,” Dr. Daniel Remar, assistant professor of hospitality management in the Paul College of Business and Economics at the University of New Hampshire, wants to find out how and why we make choices about what fish we eat at the restaurant table. Until Sept. 9, he’s conducting a study titled “Assessing the Potential for Development and Promotion of a Consumer Market for Underutilized Fish Species in Restaurants and Foodservice,” funded by a grant award from the National Oceanic and Atmospheric Administration (NOAA) and you can be a part of this important work.
